Story

Real ranch gets its creaminess from buttermilk and mayonnaise, neither of which comes anywhere near this bowl. Tahini, which is nothing more cheffy than sesame seeds ground to butter, does that work instead, which is also why it keeps a full week in the fridge where a dairy dressing would sulk and turn in three days. The maple and a genuinely generous hand with salt are what fool the tongue into thinking ranch, so do not be shy with either.

Ingredients

  • 1 cup smooth liquid tahiniwell stirred
  • ½ cup lemon juice
  • ½ cup water
  • ½ tsp garlic powder
  • 2 tbsp maple syrup
  • 1 tbsp olive oil
  • salt and black pepperat least 1 tsp salt
  • 1 cup soft herbsequal parts dill, chives and parsley, finely chopped

Method

Yes, ranch. I can feel you recoiling and I forgive you, but this has never met a foil packet of buttermilk powder or a bottle of the beige stuff in its life. It is the sesame version, tangy and herby and green, the dressing ranch always wished it could grow up to be. Keep it standing by for when the fridge is full of raw vegetables and no ideas. Good on grilled lettuces, dragged through with crudités, spooned over roast potatoes or folded into a wrap, and better the day after you make it, so a batch on Sunday is never wasted.

  1. In a large bowl, whisk the tahini with the lemon juice. It will seize violently and look like a mistake, going stiff and grainy as creamed butter. This always happens and it is not a mistake, hold your nerve.
  2. Whisk in the water a splash at a time and watch it come back, turning pale, smooth and silky as it loosens. Cold water pulls it paler than warm ever will, if you want it prettier.
  3. Whisk in the garlic powder, maple syrup and olive oil. Season with the salt and pepper and taste, it truly wants at least a teaspoon of salt to sing. Fold in the herbs last so they stay bright and green rather than bruising into the mix. Use it straight away, though tomorrow it will be even better.
